This week has been a big and exciting week for me. Monday was my birthday (feel free to send me flowers, chocolate and a singing telegram!) Then, on Tuesday, M and I found out the gender of our baby. Now of course you all want to know what it is but too bad so sad because I’m not going to tell you! Don’t worry, I won’t keep it a secret forever. I just need to keep it a secret until Saturday because we are going to reveal it at my birthday party. Now, a little about today’s recipe. Kerrygold provided me with some of their fabulous butter, Skellig cheese and Reduced-fat Dubliner cheese to make a healthy recipe. Since healthy recipes are my specialty, I wanted to have a lot of fun with this one. After thinking about it for a while I decided I wanted to make a dessert that really highlights the sweet and pungent flavor and smooth texture of Kerrygold’s cheddar. I also wanted to keep it simple and knowing how well cheddar and apples go together, my answer was a delectable crumble.

I reduced the amount of sugar you would normally put in a crumble to bring out more of the cheese and apple flavor (and bonus, it’s healthier!). The cheddar melts slightly and adds extra creaminess to the whole dessert and the crispy oat topping made with Kerrygold butter is the perfect texture contrast. Each one of these desserts is huge and under 300 calories.

Now, when I took these out of the oven, I expected them to be good but I didn’t expect it to be the best crumble I’ve ever eaten. M said the same thing (meaning they were all gone in no time) and I’ve been craving it ever since. Good news is that they are quick enough that we can have a homey rich and comforting healthy dessert any night we want. They are also so easy to make that even M could do it all on his own.

The moral of the story is there is always room for cheese and dessert, even in a healthy diet.

Ingredients:

  • 1 Fuji apple, cored and diced
  • 1 granny smith apple, cored and diced
  • 4 ounces Kerrygold Skellig Sweet Cheddar Cheese
  • 2 Tablespoons sugar
  • 1 teaspoon cornstarch
  • ½ cup rolled oats
  • ¼ whole wheat flour
  • 2 Tablespoons light brown sugar
  • 3 Tablespoons cold Kerrygold Unsalted Butter

Directions:

Preheat oven to 350 degrees. Combine the apples, Kerrygold Skellig, sugar and cornstarch in a large bowl and stir to combine. Divide evenly among 5 ramekins.

In a medium bowl, combine the oats, flour and brown sugar. Cut the butter into small pieces and cut into the oat mixture with a pastry blender or with your fingers until it resembles the coarse crumbs or a sandy texture. Evenly distribute the mixture on top of each of the 5 ramekins filled with the apple mixture.

Place on a baking sheet and bake 35 minutes, until bubbly and browned on top. Remove and let cool 5 minutes before serving.

These can be made ahead, refrigerated and baked whenever you are ready.
