Strawberry Glazed Pork Sandwich with Strawberry Pineapple Salsa

It’s the beginning of strawberry season here in Southern California and those bright red juicy berries are just gorgeous! Every Sunday at the farmer’s market I’m greeted by trays of smiling strawberries. Biting into one of these berries I am reminded how incredibly lucky M and I are to live in San Diego. Not only do we have the best year-round weather but we can also grow delicious fruits and vegetables year-round. Of the best of these are the strawberries.

Off to Camp I Went… And Came Back Inspired!

All the Campers/Bloggers

I had the amazing opportunity to attend Camp Blogaway this year. For those unfamiliar, this conference is a yearly event held at a dedicated camp (complete with woods & cabins) up in the San Bernardino Mountains in Angelus Oaks, CA. Now, I was informed this was rustic, but for a girl who grew up camping in tents in the Midwest, this was fancy camp!

I didn’t know any other bloggers when I signed up for this conference but I was hoping to meet some nice people, expand my horizons and learn a few techniques… I had no idea that I was about to experience a life-changing event. The people I met were fantastic and inspiring. So inspiring, in fact, that I started to rethink my whole life.

Not Your Average Bake Sale…

Chipotle Pumpkin Seed Brittle made by me!

What happens when you get 40+ food bloggers together and have a bake sale? A whole lotta magical goodness, that’s what! Last Saturday I had the incredible honor to participate with other food bloggers in San Diego to raise money for Share Our Strength. One in five children in the United States struggle with hunger and this wonderful organization creates initiatives to ensure that children have adequate access to nutrition in school and at home. Food bloggers in cities all over the country banded together to support this worthy cause.

Pretzel Coated Chicken Fingers & Honey Dijon Dipping Sauce

Life has been incredibly busy lately. M, my fiancé (loooove saying that!), and I have been checking out wedding venues in San Diego, searching for a new house and entertaining visitors. Add full time jobs on top of that and we’ve barely had any time to sleep! Now that things are finally starting to calm down, I can focus more on posting some of the fun recipes I’ve created recently. Even when things get crazy I still find time to cook. Although I love creating extravagant menus, most of the meals I make are quite simple and can be whipped up easily for quick lunch or weeknight meal.

These pretzel coated chicken fingers are perfect for a speedy and effortless meal that your whole family will love. The tender white meat chicken coated in crunchy salty pretzels and served with a sweet and tangy honey mustard sauce is sure to make big and little mouths happy. Once you try these you will never submit to prepackaged frozen chicken fingers again. Pair them with some crisp steamed great beans and watch everyone dip until their plates are cleared!

Pumpkin Oatmeal Pancakes

I’m not normally a sweet for breakfast kind of person, but this last weekend I felt like some hearty pancakes. Now this is strange because I don’t even really like pancakes. Well, I should say I don’t really like typical plain pancakes. I DO like hearty pancakes and deliciously flavored pancakes and I absolutely LOVED these pumpkin oatmeal pancakes I made! They are fluffy, sweet and lightly spiced and perfect for a quick and satisfying breakfast. And what better excuse to use the adorable spatula I received from OXO than to make some adorable little pancakes!

OXO sponsors a program called Cookies for Kid’s Cancer. They have hosted bake sales, sold cookies and raised thousands to support pediatric cancer awareness. You can find more information at They also created a super cute petite silicone spatula with the signature phrase “Be a Good Cookie” to help support the cause. I am giving away one of  these OXO spatulas AND a $10 Amazon gift card!
