Kiwi Cucumber Agua Fresca
It’s hot outside. Crazy hot. And seriously muggy. Every time I leave the house, I feel so sticky, sweaty and gross, I just wish someone would hose me down. I’ve even been taking cool showers which is a big deal for me because I usually like my water super steamy. I’m reminded of summers growing up in Indiana when temps would get up to the high 90’s and I would lay for hours on the kitchen floor in my dad’s house encircled by large fans wearing only my bathing suit. He didn’t have air conditioning – didn’t believe in it. He wanted to “feel” the weather. I, however, as a teen girl, just couldn’t bear it. Outside was bad enough with the thick blanket of humidity pushing down on my shoulders, but inside everything just felt damp like I was living in a swamp. I used a lot of ice in those days and drank a lot of cool lemonade, water and iced tea while it lasted.
We don’t have air conditioning in our house now in San Diego, but that’s not because we want to feel the weather. We simply just don’t need it because it only gets really hot a few days of the year and the humidity is usually low. When it does get hot, however, you will see people queuing up at taco stands and taquerias all over town, longing to quench their thirst with an agua fresca.
Agua fresca is Spanish for fresh water and is simply a mixture of fresh fruit or ground cereal, water and sometimes sugar. They are incredibly refreshing and cooling and perfect for picnics, cookouts and hot days at the beach or pool. Labor day is coming up and my husband, M, and I are going to be in Los Cabos, Mexico for the weekend. So, in the spirit of Mexican vacations, Labor Day cookouts, hot weather and all things cool and refreshing, I’m sharing this thirst-quenching Kiwi Cucumber Agua Fresca to cool down the hot summer. Now go put on some sunscreen.
Kiwi Cucumber Agua Fresca

Ingredients:
- 6 kiwis, peeled
- 1 large cucumber, peeled and seeded
- 4 packets Splenda (or other no calorie sweetener)
- 6 cups water, divided
- Extra kiwi slices for garnish
Directions:
Place the kiwi, cucumber, Splenda and 2 cups of water in a blender and puree until smooth, about 3-4 minutes.
Transfer to a pitcher and stir in the remaining 4 cups of water.
Serve chilled over ice. Garnish with kiwi slices
